I don't think it's correct to say that dungarees/dungerees got their
name from dung as in stables. "Dung" is Old English [dung] and the
original sense is uncertain. "Dungaree" is from Hindi [dungri] and
means a kind of coarse, inferior cloth.
At least that's what the OED says.
