I added the following example to the att.internetMedia.xml and appear to 
have broken the subversion HEAD (a new and hopefully good version is 
rebuilding as I speak). The addition was:

<exemplum xml:lang="en">
   <p>In this example <att>mimeType</att> is used to indicate the URL 
points to a TEI XML file encoded in UTF-8.</p>
   <egXML xmlns="http://www.tei-c.org/ns/Examples">
     <ref mimeType="application/tei+xml; charset=UTF-8" 
target="http://tei.svn.sourceforge.net/viewvc/tei/trunk/P5/Source/guidelines-en.xml"/>
   </egXML>
</exemplum>

I'm not quite sure quite what I broke. I've rolled back my changes but 
things are still broken.

The console output is at: 
http://bits.nsms.ox.ac.uk:8080/jenkins/job/TEIP5-Documentation/482/console 
which makes it look like the breakage was in the middle of generating a 
PDF file.

My current best guesses are that something in there is clashing with the 
PDF generation; the disk is full; or I've done something really silly.
