Ben Schneiderman published a number of studies on user interfaces
with this kind of information. A quick search turns up this one:

Ben Shneiderman: Response Time and Display Rate in Human Performance
with Computers. ACM Comput. Surv. 16(3): 265-285 (1984)

Jakob Nielsen also did this kind of research, and he might refer to
the actual publication in his book on Usability Engineering.
